The nectar of horse chestnut flowers that grow naturally at altitudes of 600 to 800 meters in Aizu is diluted with underground water from the Iide mountain range, inoculated with yeast, and slowly fermented for about a month to create a liquor with a crisp taste like fine wine and a refreshing sweetness and acidity.
The honey used as raw material is pressed by beekeepers in the morning, and the bees fly during the night to dry the honey, resulting in a high-quality raw material that is highly concentrated and resistant to deterioration.
It can be enjoyed as an aperitif chilled at around 0-4°C, or as a dessert wine chilled at around 8-12°C. Aizu Mead goes well with any type of Japanese, Western or Chinese cuisine, but is recommended for prosciutto and cheese salads.
Also, it is said that ancient Germanic peoples drank mead for one month after getting married. This was called the honey moon, and is the origin of the modern word honeymoon.
