    My job is to taste honey from all over the world and explore the possibilities of pairings. Whenever I travel, I always try local honey to broaden my palate. I'm also interested in pairings with ingredients that are carefully selected for their origin and production method, and I'm particularly interested in pairings with wine, craft beer, cheese, nuts, and dried fruit. I'm good at suggesting ways to enjoy honey that make the most of its aroma, richness, spiciness, and bitterness.
