This honey is collected from the colorful flowers that bloom in spring in Sicily, such as clover, acacia, and borage. It has a mellow and elegant sweetness and a refreshing floral scent. It goes well with dairy products, and is recommended for buttered toast and cream cheese. All of Coco's honey is certified organic by Italy (ICEA).     Coco started beekeeping in 1981 when he was 20 years old, and this year marks his 34th year of beekeeping. Seven years after he started, he went to various countries to teach beekeeping as part of his activities with an NGO. Coco's beekeeping farms are scattered around Mount Etna, about an hour's drive from Catania city, and he has 340 hives in 20 locations. Careful observation of nature and the environment is what Coco is most concerned about in his beekeeping business.

Honey harvesting area details It belongs to the province of Ragusa, and is located about 14km south of Ragusa. (Elevation 296m, population approx. 53,000) The town spreads across two canyons carved by rapids, and is roughly divided into two parts: Modica Alta (high ground town) and Modica Bassa (low ground town). It was registered as a World Heritage Site in 2002. The simple Modica chocolate, made using traditional methods handed down from the Spanish colonial period, is attracting attention.
