Cherry blossoms only bloom for a short period of about one week, when the honeybees are not yet fully developed. This is an important preparation period for increasing the number of bees in preparation for the peak season that follows, so not many beekeepers harvest cherry blossom honey. Even among the several Labeille apiaries around Mount Takao in Hachioji City, Tokyo, only a few of the honey harvested in spring is made from cherry blossom single-floral nectar. We taste every single can of honey harvested, and select the honey with the highest cherry blossom purity. We fill the bottles without heating it at all to maintain the flavor.
